Our tomato

At Corex, we are proud to keep the tradition. We treat the tomato with the same care and attention of the farmers of the past.
Our tomato comes from fertile and sunny fields of Southern Italy, where they are slowly watered. We collect them during their top ripening period (between July and September), when their color is intensely red and their peel is polished.
As soon as they are collected, they are brought to the processing plant. There, they are washed carefully and go under the processing process. Processing the tomatoes soon after the collection guarantees the highest quality of the final product.

Our tomato

At Corex, we are proud to keep the tradition. We treat the tomato with the same care and attention of the farmers of the past.
Our tomato comes from fertile and sunny fields of Southern Italy, where they are slowly watered. We collect them during their top ripening period (between July and September), when their color is intensely red and their peel is polished.
As soon as they are collected, they are brought to the processing plant. There, they are washed carefully and go under the processing process. Processing the tomatoes soon after the collection guarantees the highest quality of the final product.


The whole peeled tomatoes, the simple sauce.


We collect the typical Roma style tomato, which is cultivated primarily in the South of Italy. Hard and solid pulp, with a balanced taste between sweet and acid.

The processing phase starts with a sunburn of the berry that enables the removal of the peel. The whole peeled tomatoes are very versatile: you can use them for soups, seafood and meat based dishes as well as vegetable based recipes.

The chopped tomato is a half-hard product that can be used in the Italian cuisine as a good base for all the dishes that require the use of fresh tomatoes.

Its consistency makes it perfect for short cooking. Perfect for the seasoning of the paste, it is the ideal choice also for seafood based dishes.

The passata, the strenght of tradition


In order to obtain the passata, the tomatoes are shredded and then heated at high temperature for a short time, avoiding so to affect nutrients.

A creamy density and an intense taste characterize our passata. It is ideal for meat ragù as well as for short cooking recipes, such as boiled dishes.

Thanks to sophisticated evaporation processes that delete watery parts, our tomatoes become a “concentrated” of flavor and color.

Several chefs suggest its use as “pure”, without cooking it, for cold sauces. It is considered a valid help to expedite the cooking process for sauces or creams that require long time to be cooked.
